Why cocoa needs a precise conversation
Bean quality is largely set before shipment, in fermentation and drying. Cocoa fermented well and dried to a stable moisture travels better and performs more predictably. Rather than publish values we cannot yet stand behind for your order, we prefer to understand what you need and confirm what we can support.
